I was so intimidated by vegetable soup for so many years.
Yes, this chick, was intimidated by vegetable soup.
I can make anything in the world, I think, but vegetable soup made me so nervous.
Why?

So, you know me, when I put my mind to something there is no stopping me. So a few years ago, I decided it was fine time that this girl took on the vegetables and broth and there was no turning back.
Of course, homemade vegetable soup is always the best with fresh vegetables and tomato juice made from tomatoes straight out of the garden, this can't always be possible so that is where this easy-peasy recipe comes in to save the day!

This is what your going to need for vegetable soup.
Ingredients
Meat-(stew meat, leftover roast, or even browned down hamburger)
I, generally, use stew meat that I pick up at the store.

Butter (to fry the stew meat in)
Onion salt, salt & pepper-to season the meat when frying to taste, of course.
2 cans V-8 or tomato juice
1 can corn
1 can peas
1 can green beans
1 bag of baby carrots
4-6 cans of canned whole potatoes or you can peel and add your own potatoes
1 whole onion chopped
20 beef bouillon cubes or to taste
1 cup macaroni noodles
If you bought stew meat then you need to grab a skillet, put a couple of spoonfuls of butter in the pan and toss your stew meat in there to cook. Season your meat with salt, pepper, and onion salt to taste.When it's done drain the grease off.
If you're using leftover roast just chunk the leftover meat and put it in the soup pot.
You can also brown down hamburger in a skillet, drain off the grease when it's cooked and add it to the soup pot, too.
So the meat is in the soup pot at this point.
Next add all of your vegetables to the soup pot.
Now, add both cans of tomato juice.
You also need to add water to this mixture.
I usually add enough water so the liquid level is about 2 1/2 inches from the top of the pot so that when it comes to a boil it doesn't boil over.
I add about one tomato juice can of water to taste, of course.
It's better to add not enough water than too much water. So just add the water slowly to your own taste.
Add the twenty beef bouillon cubes, at this point.
Bring soup to a boil and then turn down to a medium boil.
Add salt & pepper to taste.
About 10 minutes before you eat the soup and the soup is boiling add a handful of macaroni noodles.
If you want to eat it at this point it's fine to do so or you can turn it down to a low boil or simmer and let it cook for an hour or so.
This is so easy that I almost feel bad calling it

Looks delicious and comforting. My favorite way to make vegetable soup is to start with a ham bone and then throw in the kitchen sink. But the chunks of beef in yours look yummy.
Well, now, that's interesting......I have never heard of putting a ham bone in as a started. Yum!
