The Best Homemade Zucchini Bread Recipe in Illinois!

Oh my goodness, we have been eating zucchini bread over the last couple of days and I consider ourselves to be very lucky people.

I think zucchini is so underrated and so today I am going to spotlight my very yummy mother in laws, God her rest her soul, recipe for zucchini bread.

Mine still doesn't quite taste like hers, no matter how many times I make it, but it is a very close second and so delicious and super easy!

Zucchini Bread Recipe

3 eggs well beaten

1 cup cooking oil

2 cups sugar

2 cups grated zucchini

2 tbls. vanilla

3 cups flour

1 tsp. baking soda

1/4 tsp. baking powder

3 tsp. cinnamon

1 tsp. salt

(optional) 1/4 cup chopped walnuts

Add oil, sugar, zucchini, vanilla, & cinnamon to beaten eggs.

Sift the rest of the dry ingredients.

Add the sifted dry ingredients to the creamed mixture.

*(optional)-stir in walnuts at this point.*

Pour the combined mixture into either two greased loaf pans or a 9x13 cake pan and bake at 325 degrees for one hour.

This is what the zucchini looks like once you start grating it. I then take the grated zucchini and put it in a measuring cup to get the correct amount.

This is what the egg, sugar, oil,zucchini, and vanilla  mixture looks like before I add the cinnamon.


This is the perfect color and consistency when combining the dry ingredients to the mixture.

It makes my mouth water just looking at the pictures.

I promise you that this is the best recipe for zucchini bread ever. I have tried several other and this one never fails. The middle has never dropped in the middle of the bread like other recipes that I have tried.

(another secret is do not open the oven door during the cooking process-this will also help you to avoid the dropping of the center of the bread)
